The authentic Tuscan chef Nicola came to San Paolino from the Osteria Badali, one of the most popular cuisines in Florence. For the all-Italian kitchen concept, he created a menu structure that focuses on conviviality, typical Italian family meals and the sharing of dishes. Born in Rome, Alessandro is a passionate and dedicated host. After various stops at luxury hotels such as St. Regis and Castello di Casole, he decided to join the young team at San Paolino Restaurant. Together with their teams, they welcome locals and hotel guests alike in a laid-back and warm atmosphere.
